Tamari Soy source Yakitori-don

Method

1. Cut chicken leg into small serving size.

2. Spread oil into a frying pan, place the chicken on the frying pan at medium flame.

3. Pour vinegar into the pan and cover with lid to let it steam for 5 minutes.

4. Take off the lid and add sugar, sake, San-J soy sauce and mirin in order at medium-high flame.

5. While cooking the chicken, cut spring onions into 3 to 4 cm.

6. Cut the white part of leek into 3cm or so.

7. After the ingredients in the frying pan is half of what you put in, add spring onions and let it simmer for 1 minute.

8. Put rice into a bowl and place baby spinach on top. After the baby spinach, place the chicken as well.

9. Sprinkle white sesame and leek on top and finished.

Chef’s Tips
If you put 1 tablespoon instead, it will be less sweet but the flavor will be a bit blunter. For a clear and deep taste please put 2 tablespoon of sugar. Vinegar is not a necessity but it will make the chicken much tenderer. If you choose to use a wok to cook, you wont need to worry about putting the lid on.
