It is often said a lot of nutrients which are good for health are included in tofu, but do you know how good to your health?

It is said that tofu has been already made in China in about from AD 25 to 220. It was transmitted to Japan after the 14th century, and the first tofu cookbook in Japanese is published in the Edo era (1603 – 1868), too.

In late years, it is demonstrated scientifically by establishment such as the dietetics that tofu is the extremely high quality protein food. Tofu is attracted attention as the food which is effective for various disease prevention and health maintenances. It is the health food which the tofu is old, and is new.

Kind of The Tofu

Firm Tofu  The soymilk is thickened more and less water is pressed put, great for dips.
 It is placed the solidified soybean milk in a mould, and rode a weight and
 drained water off.
Silken Tofu  The creamiest type of tofu and retains the most water, making it creamy,
 wonderful for smoothies. It is poured soybean milk in a mould and solidified.
 Dried Bean Curd  Condensed and dried firm tofu. It is included more protein than firm tofu.


The ingredients of the tofu are soybeans, and Soybeans have many high quality protein and adipose content to be said they are meat of the field and high the nutritive value food. Because the tofu is plain and is not oily or thick, it is hard to imagine that there is fat, but, actually, the fat (18-26%) is included to come next to the protein (35-45%).

The protein (20.4g) of one tofu (300g) is equivalent to 3.5 eggs or ½ chicken thigh fillets (118g). From this, do you know how tofu is high protein? In addition, the tofu is low-calorie, and feeling of fullness is brought because it is succulent (approximately 80%) and it may be said that it is superior diet food because tofu is nutritious. It can be said tofu is a longevity food that there are many longevity people in the area eating a lot of tofu.

Recipes

As for the tofu, the recipe is infinity!

 

Korean Style Chilled Tofu (serve 2)

[ ingredients ]

1 Tofu (300g)
4 tbsp Kimchi
½ Cucumber
¼ Spring Onion
2 pieces Korean Nori Seaweed
• 2 leaves Lettuce
2 tsp of Kimchi Juice
1 tsp Soy Sauce
1 tsp Mirin Cooking Sweet Sake
1 tsp Sesame Oil

[ methods ]

1. Chop cucumber finely and leave some for topping. Finely chop Kimchi and Spring onion too.
2. Place cucumber, spring onion and kimchi in a bowl, and add kimchi juice, soy sauce, mirin,
    sesame oil and chilli powder if you prefer.
3. Place halved tofu on a serving plate, top with cucumber mixture.
    Garnish with lettuce, nori seaweed and cucumber.

 

Tofu Baking Sauce (serve 2)

[ ingredients ]

1 Tofu (300g)
1 tbsp Miso Paste
1 tbsp Mayonnaise
Parmesan Cheese, shredded or powdered

[ methods ]

1. Smash tofu and put mayonnaise and miso paste, and mix well.
2. Put your favourite veggies cooked in a heat proof container,
    bake in an oven until golden brown on surface.

* Can be used as white sauce. The ingredient of the inside takes an onion, a potato, a broccoli, ham, a leek or your favourite ingredients. Cook veggies before poring over the tofu sauce, then bake it in the oven.

In fact, the superior soybeans are not so good digestion and absorption nutritionally. Tofu is said that soybeans are processes to be good of digestion and absorption. Therefore it is most suitable for babies and people with illness.
